Edamame Brown Rice Bowl

Edamame is a complete soy protein, so it does not need hand-holding from grains the way most legumes do. Brown rice adds bulk and carbs, while sesame and nori contribute minerals and a sulfurous amino acid top-up. It is a simple, practical lunch bowl.
Ingredients
- 1 cup brown rice
- 2 cups water
- 2 cups shelled edamame, thawed
- 1 large avocado, sliced
- 2 sheets nori, cut into thin strips
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp maple syrup
- 1 tbsp toasted sesame oil
- 2 tbsp sesame seeds
- 1 tsp grated fresh ginger
- 1 scallion, sliced
Method
- Bring brown rice and water to a boil, then reduce heat and simmer 25 minutes until liquid absorbs.
- Whisk soy sauce, rice vinegar, maple syrup, sesame oil, grated ginger, and half the sesame seeds for the dressing.
- Fluff the cooked rice and fold in the edamame; cook 2 minutes over low heat until warmed through.
- Divide rice and edamame between two bowls. Arrange avocado slices on top.
- Drizzle generously with sesame dressing. Scatter nori strips, remaining sesame seeds, and scallions over both bowls.
